In a medium pot, heat the oil over medium heat. Add onions, carrots, and celery. Cook for 10-15 minutes, stirring occasionally, until softened and lightly browned.
Add garlic and green onions. Stir for 2 minutes.
Add barbeque sauce, water or chicken broth, cooked pork, and pinto beans. Stir well.
Simmer, stirring occasionally, for 45-60 minutes until the veggies are soft and the meat is very tender.
Serve over rice, on a bun, or in a lettuce wrap. Enjoy!
