4smallpotatoeschopped (about 20 ounces)
2mediumonionschopped
1headcauliflowerchopped
4mediumbell pepperschopped, any color
1tablespoonolive oildivided, or avocado oil
12ouncescooked chicken sausagesliced
Instructions
Preheat the oven to 425*F. Line two baking sheets with foil or parchment paper
Add the potatoes and onions to a baking sheet and toss with ½ tablespoon oil. Transfer to oven
Add the cauliflower and bell peppers to the other baking sheet with the reamining ½ tablespoon oil and toss. Transfer to the oven.
Roast for 25 minutes.
Stir and add sausage to the baking sheet (either pan or both).
Roast another 15-20 minutes, until veggies & sausage are lightly browned. Remove from oven and enjoy!
Notes
*Make sure not to overcrowd the baking sheet. This will cause it to have a much longer cooking time, and the potatoes and/or onions might not get crispy.
