Roasted Sausage and Veggies
Toss six ingredients on a baking sheet for this Roasted Sausage and Veggies recipe to have a complete meal ready in less time than it takes to order takeout
chopped (about 20 ounces)
chopped, any color
divided, or avocado oil
cooked chicken sausage
Preheat the oven to 425*F. Line two baking sheets with foil or parchment paper
Add the potatoes and onions to a baking sheet and toss with 1/2 tablespoon oil. Transfer to oven
Add the cauliflower and bell peppers to the other baking sheet with the reamining 1/2 tablespoon oil and toss. Transfer to the oven.
Roast for 25 minutes.
Stir and add sausage to the baking sheet (either pan or both).
Roast another 15-20 minutes, until veggies & sausage are lightly browned. Remove from oven and enjoy!
*Make sure not to overcrowd the baking sheet. This will cause it to have a much longer cooking time, and the potatoes and/or onions might not get crispy.
