Ingredients
2eggs
10ouncescoconut yogurtdivided
1tablespoonhoneyor maple syrup
½teaspoonvanilla extract
⅓cupoat flour
2tablespoonscoconut flour
½teaspoonbaking powder
Instructions
In a medium bowl, whisk together eggs, 6 ounces of yogurt, honey, and vanilla extract.
In a small bowl, whisk together oat flour, coconut flour, and baking powder. Transfer the dry mixture to the wet mixture and stir to combine completely.
Preheat a large nonstick griddle or skillet over medium-low heat.
Add about ¼ cup batter to the griddle per pancake. Flip when small bubbles form on the pancake (2-3 minutes), and cook another 2-3 minutes until done.
Top cooked pancakes with remaining 4 ounces of coconut yogurt (about ¼ cup per serving). Enjoy!
