Ingredients
For the wraps:
2tablespoonhoney
2tablespoonCreole mustard
½teaspoonsalt
1lbchicken tendersor breasts, cut into slices
1red bell pepperdiced
1cucumberjulienned
2green onionsdiced
1head Bibb or Iceberg lettuce
For the dipping sauce:
¼cuphoney
¼cupCreole mustard
¼cupcottage cheese
Instructions
Put the honey, mustard, and salt in a zip-top bag and add the chicken. Marinate for at least 20 minutes or up to overnight {if marinating longer than 30 minutes, be sure to keep in the refrigerator}.
Meanwhile, add all the ingredients for the dipping sauce into a food processor or blender and process until completely smooth.
Once the chicken has marinated, heat a large nonstick skillet over medium-high heat and add the chicken. Cook for about 5 minutes per side until done.
Stir together the bell peppers, cucumber, green onions, and cooked chicken. Fill each lettuce cup with chicken & veggie mixture. Drizzle dipping sauce over mixture and serve with any extra dipping sauce on the side.
