White Cheddar JalapeÃ±o Pimento Cheese
This pimento cheese has no mayo and uses reduced-fat cheese to cut back on fat & calories.

- 16 ounce cheddar cheese shredded
- 3/4 cup cottage cheese
- 1 TBSP milk
- 1 jalapeÃ±o minced
- 3 TBSP grated onion
- 1/8 tsp cayenne pepper
- 4 ounce jar diced pimentos drained
- 2 ounce jar diced pimentos drained
Grate the cheese into a large bowl.
Meanwhile, blend cottage cheese & milk in a food processor or blender until smooth.
Stir blended cottage cheese into grated cheese. Stir in jalapeÃ±o, grated onion, and cayenne pepper.
Stir in pimentos. Cover and refrigerate at least an hour or overnight.
Keeps in the refrigerator for about 5-7 days.
