White Cheddar Jalapeño Pimento Cheese

This pimento cheese has no mayo and uses reduced-fat cheese to cut back on fat & calories.

  • 16 ounce cheddar cheese shredded
  • 3/4 cup cottage cheese
  • 1 TBSP milk
  • 1 jalapeño minced
  • 3 TBSP grated onion
  • 1/8 tsp cayenne pepper
  • 4 ounce jar diced pimentos drained
  • 2 ounce jar diced pimentos drained


  • Grate the cheese into a large bowl.
  • Meanwhile, blend cottage cheese & milk in a food processor or blender until smooth.
  • Stir blended cottage cheese into grated cheese. Stir in jalapeño, grated onion, and cayenne pepper.
  • Stir in pimentos. Cover and refrigerate at least an hour or overnight.
  • Keeps in the refrigerator for about 5-7 days.
