Preheat oven to 375°F. Line a 9 x 13 inch baking dish with foil. Set aside.
Whisk together flour, cinnamon, baking soda, and baking powder. Set aside.
Stir together melted butter and honey; stir it into the flour mixture. Stir well.
Pat the dough into the lined baking dish in a thin layer, making sure to completely cover the bottom of the baking dish. {It might look thin but it will be good once it bakes.}
Bake in preheated oven for 12-14 minutes until it's lightly browned. Remove from the oven and set aside to cool.
Meanwhile, in a medium saucepan over medium low, bring the butter and brown sugar to a simmer. Stir often. Simmer for 5 minutes.
Carefully pour the butter-sugar mixture over the graham cracker in the baking dish. Bake in the preheated oven for 5 minutes.
Take out of the oven and evenly sprinkle the chocolate chips over the graham crackers. Return to the oven and bake 5 minutes.
Take out of the oven and carefully spread the melted chocolate so it covers the graham crackers. Using an offset spatula is really helpful for this.
If you are using any optional toppings, sprinkle those on now.
Let the toffee cool, and cut into 24 squares. Keep covered in the refrigerator. Enjoy!
