1tablespoonolive or canola oil
1lb. pork tenderloincut into bite sized pieces
2bell peppersdiced
2onionsdiced
2carrotsdiced
2clovegarlicminced
1chipotle pepperminced {from a 7 oz. can chipotle peppers – just use one pepper}
4cupslow sodium chicken broth or beef broth
1can white or yellow hominy15 oz.
Instructions
In a large saucepan or soup pot, heat oil over medium-high heat. Add sliced pork and stir-fry for about 3 minutes, until no longer pink. Remove from pan, and set aside.
