Add sweet potatoes, onion, garlic, rosemary, water or broth, and salt to the slow cooker. Stir well. Cover and set on High for 3 hours or Low for 5 hours.
Add remaining ingredients and stir well. Use an immersion blender to completely blend together or carefully transfer ingredients to a blender and combine.
Serve as a starter or side dish, or top with chicken, chickpeas, and/or parmesan and enjoy as a main course. Enjoy!
