Chocolate and Raspberry Tartlets

Ingredients

For the pudding:

  • 1 ripe avocado
  • 1/2 banana {about 1/4 cup mashed}
  • 3 TBSP + 1 tsp cocoa powder
  • 1 TBSP vanilla extract or coffe liquor {like Kahlúa}
  • 1 tsp honey or maple syrup optional
  • 1/4 tsp salt

For the tartlets:

  • 2 packages {15 each} mini phyllo shells
  • 1 cup raspberries from 1 pint Driscoll's Raspberries
  • mint leaves optional

Instructions

For the pudding:

  • Add all the ingredients to a food processor in the order listed, starting with the avocado and ending with the salt.
  • Blend until completely smooth. Cover and refrigerate for about 10 minutes.

For the tartlets:

  • When ready to serve, arrange phyllo shells on a platter. Fill each mini shell with about one teaspoon of pudding. Top each with a raspberry. Best served within the hour that they are assembled.
