For the cupcakes

  • 1/4 cup butter room temperature
  • 1/4 cup plain Greek yogurt
  • 1 cup sugar
  • 2 large eggs
  • 1 TBSP vanilla extract
  • 1 TBSP amaretto
  • 1 1/2 cup white whole wheat flour or all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 cup milk
  • food coloring purple {or blue + red}, green, and yellow

For the frosting

  • 2 TBSP butter room temperature
  • 2 cups powdered sugar
  • 1/4 cup amaretto or 3 TBSP milk + 1 TBSP vanilla extract


For the cupcakes

  • Preheat the oven to 350°F. Line a cupcake pan with cupcake liners or lightly spray with oil; set aside.
  • In the bowl of a stand mixer, cream together the butter, yogurt, and sugar. Add in the eggs, vanilla extract, and amaretto. Mix until completely combined.
  • Add in flour and baking powder. Mix on low until half-way combined. Add in milk, and mix on low just until combined {do not over mix!}
  • Separate the batter into three bowls and color one bowl purple, one yellow, and one green. Pour the batter into the prepared cupcake pan, one color at a time. Do Not Stir! {the batter should fill each cupcake spot about 2/3 full}
  • Bake until done {when a toothpick inserted in the center comes out clean}, about 20 to 25 minutes. Let cool completely before frosting.

For the frosting

  • Add the butter, powdered sugar, and amaretto to a mixing bowl and beat on medium until fluffy. Add more amaretto or powdered sugar if desired.
  • Frost the cooled cupcakes with the icing.


*You can use different liqueurs for a change in flavor. Or substitute with 2 TBSP extra milk in the cupcakes and 3 TBSP milk + 1 TBSP vanilla extract in the icing, if desired
