For the frosting
2tablespoonbutterroom temperature
2cupspowdered sugar
¼cupamaretto or 3 tablespoon milk + 1 tablespoon vanilla extract
Instructions
For the cupcakes
Preheat the oven to 350°F. Line a cupcake pan with cupcake liners or lightly spray with oil; set aside.
In the bowl of a stand mixer, cream together the butter, yogurt, and sugar. Add in the eggs, vanilla extract, and amaretto. Mix until completely combined.
Add in flour and baking powder. Mix on low until half-way combined. Add in milk, and mix on low just until combined {do not over mix!}
Separate the batter into three bowls and color one bowl purple, one yellow, and one green. Pour the batter into the prepared cupcake pan, one color at a time. Do Not Stir! {the batter should fill each cupcake spot about ⅔ full}
Bake until done {when a toothpick inserted in the center comes out clean}, about 20 to 25 minutes. Let cool completely before frosting.
For the frosting
Add the butter, powdered sugar, and amaretto to a mixing bowl and beat on medium until fluffy. Add more amaretto or powdered sugar if desired.
Frost the cooled cupcakes with the icing.
Notes
*You can use different liqueurs for a change in flavor. Or substitute with 2 tablespoon extra milk in the cupcakes and 3 tablespoon milk + 1 tablespoon vanilla extract in the icing, if desired
