No sugar added cookie dough dip made with chickpeas and dates, full of almond and coconut flavor

Ingredients
1cuppitted datesabout 10 whole dates
1cupvery hot water
15ouncechickpeaswashed & drained (about 1 ½ cups)
3tablespoonalmond butter
1tablespoonvanilla extract
¼teaspoonalmond extract
¼teaspoonsalt
⅛teaspoonbaking powder
¼cupoats regular or quick
¼cupunsweetened coconut flakesdivided
Instructions
Add the dates to a bowl and cover with very hot water. Let sit for 15 minutes.
Remove dates from the water. Add the dates and two tablespoons of date-soaking water to the bowl of a food processor. Blend until very smooth {once you add the other ingredients, it will not get any smoother}.
Add the chickpeas, almond butter, vanilla extract, almond extract, salt, and baking powder. Blend until completely smooth.
Add in oats and 3 tablespoon coconut. Blend until smooth {adding an additional teaspoon or two of water if needed to help blend}.
Transfer to a bowl and serve immediately or refrigerate for up to 5 days. Sprinkle with remaining one tablespoon of coconut before serving.
Serve with fruit slices {or just eat with a spoon}.
