Ingredients
4roma tomatoescored & quartered
1teaspoonolive oil
¼teaspoonsaltdivided
1poundlean ground beefI used ground sirloin
1tablespoonWorcestershire sauce
2ouncescheddarsliced, divided
4largeeggs
4whole grain hamburger bunstoasted
Instructions
Preheat the oven to 450*F. Line a baking sheet with foil.
Add the tomatoes to the one side of the baking sheet and toss with olive oil and ⅛ teaspoon salt. Roast for 20 minutes.
Meanwhile, mix together the lean ground beef, Worcestershire sauce, and remaining ⅛ teaspoon salt. Shape into 4 very thin patties. Place patties onto other side of the baking sheet. Roast for another 8-12 minutes depending on desired doneness. Remove from oven and top each burger with ½ ounce cheese.
Meanwhile, fry your eggs until desired doneness and set aside.
When ready to eat, put about 4 tomato slices onto the bun, top with the burger, put the egg on top, and cover with the bun. Enjoy!
Notes
*While the nutrition content may seem on the higher end, remember that this is a full meal -- a really filling and satisfying burger. You can always make this a bun-less (or use only one half of a bun) to reduce calorie/carbohydrate content.
