No Sugar Added Cashew Sugar Cookies

  • Soak dates and cashews in hot water for 10 minutes. Drain well.
  • Preheat oven to 350°F. Line a baking sheet with foil. Set aside.
  • Add dates to a food processor and blend for 30 seconds until relatively smooth. Add nuts and process until blended. Add egg, vanilla extract, almond extract, chia seeds, baking soda, and salt. Process until barely chunky.
  • Transfer to prepared baking sheet. Place about 1 inch apart and make sure to flatten cookie before baking {they do not spread}.
  • Bake 9-12 minutes. Let them cool on the baking sheet for 2 minutes before carefully removing from baking sheet to a cooling rack.


*If your dates are very soft, you can skip the soaking time.
