Instructions
In a large skillet, heat the oil over medium-high heat.
Toss the salt, garlic powder, paprika, oregano, thyme, onion powder, cayenne pepper, and black pepper with the shrimp. Stir until shrimp is completely coated.
Cook the seasoned shrimp in one layer in the hot skillet until lightly browned on both sides, about 2-4 minutes per side. Set aside.
Meanwhile, slice the loaf of bread in half horizontally. You want a light bread; if it's dense, scoop out some of the bread to make room for the fillings.
Spread equal amounts of hummus onto each side of bread (about 4 tablespoons per half of loaf). Cover the bottom half of bread with lettuce. Top with cooked shrimp. Layer tomato slices over shrimp. Top with the other slice of bread and cut into 4 sandwiches. Enjoy!
Notes
*Use fresh bread *You can use leftover cooked & seasoned shrimp. You'll need about 1.5 to 2 cups of shrimp *If you don't like shrimp, substitute with cooked chicken or turkey *One loaf of french bread will be about 20 inches *Slice into 8 slices for appetizer sized portion
