Ingredients

  • 1/2 cup banana mashed
  • 1 cup peanut butter
  • 1/2 cup oats not instant or steel cut
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  • Stir together all the ingredients, and set aside for at least 10 minutes.
  • Preheat the oven to 325°F. Line a baking sheet with parchment paper or a silicone baking liner.
  • Put spoonfuls of batter about 1 inch apart on prepared baking sheet. Flatten as desired {the cookies do not spread}.
  • Bake in preheated oven for 7-10 minutes or until cookies are firm to the touch. Let cool on baking sheet for 5 minutes before transferring to a cooling rack. {Be careful, they crumble pretty easily}

Notes

*1/2 cup of banana is about 1/2 to 3/4 of one banana
*They will seem really greasy/watery after you mix them. Just go with it.
*Also, these cookies are not at all sturdy after baking. They just taste good and satisfy a cookie craving. Don't expect to bring them places and have them look right... but they still taste good even if they turn to crumbs or pieces :)
