This Skillet Cornbread Mix is almost just as easy as using a boxed mix, and it's 100% whole grain. Great to give the mix with a cast iron skillet for a unique and useful gift.
One day I was reading the December 2011 issue of Southern Living and saw the cutest idea for a gift!
Start by buying a cast iron skillet then make your own cornbread mix... Ta-da!
Here is my adaptation of a great idea from Southern Living.
Make sure you attach a tag with how to make the cornbread.
Skillet Cornbread
Ingredients
for the cornbread mix:
- 1 cup whole grain flour white whole wheat, whole wheat pastry, or whole grain gluten free all purpose blend
- 1 cup stone-ground cornmeal
- 2 tablespoon sugar
- 1 tablespoon baking powder
- ยฝ teaspoon salt
for the cornbread:
- 1 large egg
- 1 cup milk or buttermilk
- 4 tablespoons butter melted
Instructions
To make the cornbread mix:
- Whisk together all the ingredients. Transfer to a plastic bag and seal tightly.
- Wrap if desired. Be sure you attach the recipe, so your recipient knows what to do... or just in case you forget 😉
To make the cornbread:
- Put a 9 inch skillet in the oven and preheat oven to 425°F.
- Put the cornbread mix into a bowl and add the egg, milk, and butter.
- Whisk together until completely combined but don't over mix.
- Carefully take the skillet out of the oven and pour the batter into the skillet.
- Transfer skillet back to the oven and bake for 18-22 minutes until done. Cut into 8-12 slices and serve.
