There are times when I need dessert (which happens pretty often), and I don’t want to turn on the oven or do much work.
While I usually have some sort of dessert hanging around my kitchen since I’m always testing recipes, sometimes I am in the mood for a cookie.
And this is exactly what I love to satisfy that craving:
Microwave Oatmeal Cookie
This oatmeal cookie made in the microwave is perfect for those times!
Plus it takes less than 5 minutes and serve just one, meaning you don’t have to worry about making extra cookies you don’t need.
Oh and it’s 100% whole grain, dairy-free, soy-free, egg-free, nut-free, and can be gluten-free (see note and be sure to use certified gluten-free ingredients).
The cookie in the picture is made with brown rice flour, but I normally use white whole wheat flour.

I don’t eat microwave oatmeal cookies only for dessert, though!
Like the broiled grapefruit, this cookie is good anytime of the day, especially breakfast. And it has much less sugar than most cereals.
I prefer mine with chocolate chips, but you could certainly use raisins if that’s your thing.

How to Make It:
Combine the oats, flour, baking powder, brown sugar, and cinnamon if using. Stir in applesauce and vanilla extract. Stir in raisins or chocolate chips.
Rub a tiny bit of oil onto a microwave safe plate or bowl.
Shape mixture onto plate or in bowl. Microwave cookie on High for 60-75 seconds.
*use certified gluten-free oats and brown rice flour or gluten-free all-purpose flour blend to make these gluten free.
*You can use old fashioned rolled oats in this recipe if you pulse them in a food processor a few times before using.
*use dairy free chocolate chips or raisins for dairy free
