Well, long(ish) story short, I decided to make up a different type of tuna salad that used the basil and some other random things in my refrigerator.
How to Make this tuna salad with sun dried tomatoes
Nothing too fancy for these babies.
Start with some hard boiled eggs, and mash the yolks. Add in vinegar, salt, sun-dried tomatoes, and olive oil from the sun-dried tomatoes and mix together. Stir in the basil and tuna, and stuff into the egg white. Enjoy!

The best tuna for the recipe
Look for canned light, white, albacore, skipjack, or yellowfin tuna that is caught using hand-operated pole-and-lines or trolling lines. I really like Safe Catch, Wild Planet, and Starkist tuna because I know they are sustainably caught and are lower in mercury.
Make Ahead Tips
These are great to make ahead of time. I like to double or triple the recipe, so I have a lot in the fridge to grab whenever I am hungry and want something quick that will give me sustainable energy.
I like to hard boil a bunch of eggs at the beginning of the week, and I can make these with those eggs I already hard boiled. I actually use my Instant Pot for this, and that thing seriously makes hard boiling eggs a dream!
I used to think I didn’t like sun-dried tomatoes, but in the tuna salad, they just give it a really good flavor & aren’t overpowering.

How to Make It:
Slice hard boiled eggs in half lengthwise.
In a medium bowl, mash egg yolks. Stir in vinegar, sun dried tomatoes, salt, and olive oil.
Stir in tuna and basil.
Fill each of the egg white halves with the tuna mixture. Serve with extra chopped basil if desired.
*If you want to reduce the protein or just don't like eggs, omit the eggs and serve over lettuce or whole wheat bread.
*Do not drain oil from tomatoes; for sun-dried tomatoes not packed in oil, add an extra 1-2 teaspoon olive oil.
