Creamy Cajun Cucumber Salad is an easy, spicy, and fresh side dish great for the summer.
Summer means fresh veggies and easy (preferably no cook) recipes, and Liz from Shaw’s Simple Swaps has the perfect recipe for that!
This month, we are celebrating The Recipe ReDux‘s birthday month by celebrating another Recipe ReDuxer. This was so hard for me because I love all my Recipe ReDux pals, and it was near impossible to pick one blog and then pick one recipe.
Decision making is not my strength.
I’ve been dying to make Lauren’s (from Eating with a Purpose) Pho Salad since last summer. I recently made Alex’s (from Delish Knowledge) feta from her Vegan Greek Salad and devoured it before I could take pictures. And Deanna’s (from Teaspoon of Spice) Sun Tea is a staple in my fridge for the summer.
However, I realized that going to the grocery store was not in the cards for me this week, and I wanted to make a recipe that was no-cook, easy and involved fresh veggies. Liz had the answer to my recipe prayers with her Kachumber Salad. Funny name, delicious stuff.
I didn’t follow her recipe to the T but came close enough. I could not, for the life of me, find my garam masala so I landed on cajun spice because that stuff is abundant in our bay house.

The salad is a synch to make and is refreshing, creamy, a little bit spicy, and the perfect side. I served sautÃ©ed fish (seasoned with cajun spice) over the cucumber salad and couldn’t get enough.
But before we get to the recipe, let’s celebrate Liz a little bit. While I’ve never met Liz in person, I feel like we’re friends. She lives in San Diego (my future home) and has been really helpful in getting me excited for my move. Liz chatted with me for a solid hour on all things San Diego, and I can’t wait to hang out in real life 🙂
Liz is also very relatable. I’ve never felt judged or shamed into eating something “healthy” because of her blog or recipes, and she uses wholesome ingredients. Plus, her posts make me laugh.
Last but certainly not least, Liz (along with another fabulous Recipe ReDux pal, Sara) is bringing light to the issue of fertility. Keeping that a secret doesn’t help anyone, and Liz is doing her part and then some to help bring awareness and vulnerability to the topic.

Creamy Cajun Cucumber Salad
What You'll Need:
- 1 medium cucumber about 3 cups, thinly sliced
- 1/2 tsp salt
- 1/2 cup plain yogurt
- 1/2 tsp cajun spice
- 1 tsp lemon juice
- 1/2 small red onion about 1/4 cup, thinly sliced
- 1/2 tsp lemon zest
How to Make It:
Put the sliced cucumbers on a kitchen towel or paper towels. Sprinkle with salt and let sit for 10-20 minutes. Blot dry.
Meanwhile, stir together the yogurt, cajun spice, and lemon juice in a medium plastic or glass bowl.
Fold in cucumbers and red onion until completely tossed. Top with lemon zest. Enjoy!
