I truly love this time of year. The weather is about to be magical and Christmas is just around the corner! I mean I love the hot weather, but I’m just about ready for it to go…
I keep reading other blogs and people are posting recipes for pumpkin everything and talking about fall and changing leaves, and we just aren’t having that here. The high on Tuesday was 94°F and it was quite hot.
But since I’m forever thinking a few weeks ahead of time for my blog calendar, I am in Fall mode. So I’ve got an apple recipe for you today that is perfectly wonderful to eat when it’s still warm outside… these Cinnamon Apple Overnight Oats.
Not convinced that you will like overnight oats? This cinnamon apple recipe is just for you.
There are chunks of delicious apples in there and tons of cinnamon plus a touch of maple syrup to bring out all the natural sweetness. No mushy oats; the texture is nice thanks to the chia seeds and apples.
Overnight oats have become my new obsession because it’s just not possible to eat hot oatmeal in the summer. I basically lived off this recipe for Overnight Coffee Oats this summer.
And this Cinnamon Apple Overnight Oats will become my transition into fall breakfast of choice.
