This week, I’ve been testing and photographing multiple recipes each day, and anything that can save me from wasting food + save me time is a recipe I can get behind.
Since I only had a little leftover pork, I needed something else to add a little substance to stretch the pork.
Beans it was since there was a can of pinto beans just waiting to be used in the pantry.
Dice some veggies, add to a pot, and simmer for a while. That’s it.
It’s great served over rice or on a bun or even in lettuce leaves for a lettuce wrap. Whatever works!
