Instead, let's just focus on getting in a nutritious and satisfying meal that takes you a few minutes to throw together.

Sausage, Red Pepper, and Spinach Soup with Quinoa
Ingredients
- 2 teaspoon olive oil
- 1 medium onion diced
- 1 medium red bell pepper diced
- 3 cloves garlic minced
- 4 cups chicken broth
- 2 cups water
- ยพ cup quinoa
- 1 lb. chicken sausage sliced
- 5 ounces baby spinach or baby spinach/herb mix
- grated parmesan cheese for serving
Instructions
- Heat olive oil over medium heat in a large soup pot or Dutch oven. Add onion and bell pepper and sauté for about 7 minutes. Stir in garlic and cook for 1 minute, stirring often.
- Pour in chicken broth and water. Bring to a boil. Stir in quinoa, and cook, partially covered, for 15 minutes over medium heat.
- Stir in chicken sausage and baby spinach, and cook for 10 minutes. Serve with grated parmesan cheese if desired.
