There are times when I need dessert {which happens pretty often}, and I don’t want to turn on the oven or do much work

While I usually have some sort of dessert hanging around my kitchen since I’m always testing recipes, sometimes I just want something that isn’t at all unhealthy

And this oatmeal cookie is perfect for those times

Plus they take less than 5 minutes and serve just one, meaning you don’t have to worry about a bunch of cookies tempting you to eat just one more

The whole cookie {all for you} is just under 150 calories

Plus, it’s 100% whole grain, dairy-free, soy-free, egg-free, nut-free, and can be gluten-free {see note and be sure to use certified gluten-free ingredients}. The cookie in the picture is made with brown rice flour, but I normally use white whole wheat flour. {I just wanted to double check that the brown rice flour cookie turned out normal}

I don’t eat these only for dessert. Like the broiled grapefruit, this cookie is good anytime of the day, especially breakfast. And it has much less sugar than most cereals.

I prefer mine with chocolate chips, but you could certainly use raisins if that’s your thing.

Quick & easy cookie made in the microwave. It only serves one, so you don't need to worry about eating too many
  • ¼ cup quick cooking oats
  • 2 tsp white whole wheat flour or brown rice flour
  • ¼ tsp baking powder
  • 1 tsp brown sugar
  • Pinch of cinnamon {I usually use about ⅛ tsp because I love cinnamon!}
  • 2 TBSP no-sugar added applesauce
  • ¼ tsp vanilla extract
  • ½ TBSP raisins or chocolate chips
  1. Combine the oats, flour, baking powder, brown sugar, and cinnamon if using. Stir in apple sauce and vanilla extract. Stir in raisins or chocolate chips.
  2. Spray a medium sized microwave safe plate with cooking spray.
  3. Shape mixture onto plate. Microwave cookie on High for 60-75 seconds.
  4. Enjoy!
*use certified gluten free oats and brown rice flour or gluten-free all-purpose flour blend to make these gluten free.



  1. This was so good. It’s a good thing I ran out of oatmeal so that I didn’t make 12 more! I may or may not have added more chocolate chips than were called for. I’ll admit to nothing.

  2. hi! is it okay if i don’t put baking powder on it? will it ruin the whole thing? I only got oatmeal, flour, cinnamon powder, brown sugar. :) or I’ll just experiment on this
