An easy, tasty, and budget-friendly recipe for a versatile chicken dish

Um, yeah I don’t think there is anything better than that. Oh wait! I know: one where you can use your slow-cooker, meaning you do no cooking. Throw everything into your slow cooker and bam! you have dinner a few hours later.
One more great thing about this recipe is its versatility. I make a batch of this and keep it in the fridge for the week. You can serve it over a bed of lettuce, over brown rice, in a tortilla shell, or eat it straight from the bowl.
Woah, I totally forgot to tell you how budget friendly this recipe is! Considering this is a frugal feasts feature I write, that should be top of my list. However, that’s just bonus for this recipe because of all its other perks.
Chicken thighs are the way to get this recipe to be budget friendly. They are usually significantly less expensive than chicken breasts or tenderloins. Plus, they are incredibly flavorful.
When I use chicken thighs, I like to cut off most of the visible fat before cooking. This can get time consuming if you start getting crazy trying to cut every single piece of fat off. To save time and sanity, I just make sure that there are no huge pieces of fat before I throw them in the slow cooker. You are welcome to use whatever part of the chicken you prefer.
Then I grab a bottle of salsa that is on sale, and throw it all together in the slow cooker. And 4 hours later, you have deliciousness.
