Mmm French toast... in a casserole...
So delicious and perfect for a special morning {like Christmas!}
When I thought about doing breakfast week, I decided this had to be on the menu.
I was determined to make a French toast casserole that didn't use whole milk or cream, sticks of butter, and/or over 1 cup of sugar {!!}
Well, I am here to tell you that it can be done, my friends.
It can be done, and here is proof!
I use 1% milk, whole wheat bread, only 2 tablespoon butter and less than ยฝ cup sugar!
Now this still has a good bit of added sugar {for 6 servings it has about 4 teaspoon added sugar; for 8 servings it has about 3 teaspoon added sugar}, but that's a huge improvement from most recipes that call for at least ยพ to 1 cup.
It's not extremely sweet, so you may want to keep some maple syrup on the table for people who like a little extra sweetness.
I like sweet things, so I used a tiny bit of maple syrup & a pat of butter {it looks like a lot more than it really was}.
Serve this with some cut fruit {and maybe a little bacon for a real treat} and you have a nice, well-rounded breakfast.

French Toast Casserole
Ingredients
- 10 slices whole wheat bread
- 1 ยพ cup 1% milk
- 5 eggs
- 3 egg whites
- 2 teaspoon cinnamon divided
- โ cup + 2 tablespoon brown sugar
- 2 tablespoon butter
- optional toppings: powdered sugar maple syrup, additional butter
Instructions
- Spray a 9x13 baking dish with non-stick spray.
- Lay bread slices in the dish. You will have to cut some slices in half so they all fit. Set aside.
- Whisk together the milk, eggs, egg whites, 1 ยฝ teaspoon cinnamon, and โ cup brown sugar.
- Pour the mixture over the bread.
- Cover {with foil} and refrigerate at least 8 hours or overnight.
- Take out of the refrigerator and preheat oven to 350°F.
- In a small bowl, mix the remaining ยฝ teaspoon cinnamon and 2 tablespoon brown sugar together. Cut the 2 tablespoon butter in with two knives or just use your fingers to combine everything. It should be crumbly and look like wet sand.
- Uncover casserole; sprinkle evenly with cinnamon-sugar-butter mixture.
- Put cover back on, and bake, covered, for 50 minutes in the preheated oven.
- Remove cover and bake another 10 minutes until casserole is set and browned.
- Remove from oven; let sit for 5 minutes before serving.
- Sprinkle with powdered sugar, or serve with {a little} butter & maple syrup.
