This is one of the easiest meals…
There is very little cooking time and not much prep time either.
And there’s only 6 ingredients (plus oil and salt & pepper)! It’s also practically no cook.
These shrimp tacos are perfect for a weeknight summer meal or even for entertaining. It’s an easy recipe to stretch to feed a large crowd {just chop the shrimp into smaller pieces}.
Plus the recipe isn’t very expensive either; it’s less than $3 per serving!
That’s pretty good for a simple, easy, and healthy meal.
This recipe is courtesy of my friend who found something similar on Pinterest {I think}. She made it for dinner for 11 of us, and everyone loved them.

If you aren’t a huge fan of shrimp, you can always substitute chopped chicken breast.
Shrimp and Avocado Tacos

Ingredients (Serves 4)
- 1 avocado, cubed
- 1 red onion, diced
- juice from 1 lime
- 1/4 cup chopped fresh cilantro
- 1 TBSP olive or canola oil
- 3/4 to 1 lb. shrimp, shells & tails removed and chopped
- salt & pepper
- 8 whole wheat tortillas
Instructions
Add the avocado, diced red onion, lime juice, pinch of salt, and cilantro to a plastic or glass bowl. Gently stir together. Set aside.
Heat the oil over medium-high heat in a large skillet. Add the chopped shrimp and cook about 5 to 7 minutes, until shrimp are done. Remove from heat.
Meanwhile, warm the tortillas in the microwave {wrap the tortillas in a damp paper towel and microwave together for about 30 seconds} or individually in a dry skillet.
Gently stir the cooked shrimp into the avocado mixture. Season with salt & pepper if desired.
Serve the shrimp mixture in the warmed tortillas; feel free to add whatever extra toppings you’d like.
